Gobble Gobble, a food truck from Austin, Texas, will be permanently stationed outside Palmetto Brewing Co. starting in February. Gobble Gobble owner Joey Ryan is expanding to Charleston after opening the truck in 2017, when he quickly gained a following thanks in large part to the truck’s namesake turkey burger. 

“We mix ground turkey breast with organic vegetables and top it with white cheddar, arugula and lemon aioli,” said Ryan, describing the “Gobble Gobble,” which is based on a family recipe. The self-taught chef will also serve his “Cluck Cluck” fried chicken sandwich and “Moo Moo” hamburger, along with sides like fried brussels sprouts and cheesy potato rounds. 

“I feel like our menu pairs great with a brewery atmosphere,” Ryan said.  

Gobble Gobble is a welcomed addition to the brewery — Palmetto had been looking for a full time food option, a spokesperson said. 

“A lot of people know that we underwent heavy renovation when Catawba purchased us, and it has always been in the back of our minds to find a permanent food option,” said Palmetto marketing coordinator Tarah Gee. 

Gobble Gobble will open before February, Ryan said, and it will have the same hours as the brewery: Monday through Thursday from 4-9 p.m.; Friday-Saturday from 1-9 p.m.; and Sunday from 1-7 p.m.
