A lot of the time, legendary dishes simply do not stand up to all the hype. Thankfully, See Wee Restaurant saves she-crab soup from such a fate. The mother-son partnership of Mary Rancourt and Kurt Penninger remain loyal to the family matriarch’s recipe, and consequently deliver a bona fide version of this classic Charleston dish. Penninger’s great grandmother Susan Magwood surely knew her way around a kitchen, judging by this sublime soup. A spoon could almost stand up in the bowl, but the paper thimble of sherry thins it out to the perfect consistency. Ample crab roe in every bite seals the deal, making this a she-crab soup worth the drive out to the country.
