Knife Skills 101

Local nonprofit Bread + Butter kicks off its latest program Tuesday with a cooking class led by Lauren Furey, a personal chef in Charleston.

Bread + Butter, which connects Charleston’s hospitality industry with the community through staffing and service initiatives, will host virtual classes each month, with each one focusing on a specific culinary skill or technique.

The virtual “Teaching Others a Skill or Technique” classes stem from a pre-pandemic education program hosted by Bread + Butter at West Ashley High School, Burke High School and other local schools. Home Team BBQ’s Aaron “Fiery Ron” Siegal, Swig & Swine’s Anthony DiBernardo and Uptown Social’s Jonathan Kaldas are some of the local chefs that led the in-person classes last year.

Bread + Butter co-founder Becky Burke hopes to reach more students with the virtual series while helping to engage the culinary students who cannot access in-person education during the pandemic.

“We decided to make a series of videos so we could do some mission-driven fundraising,” Burke said. “It’s super important, and we can work with more schools now. Lauren has a lot of experience doing cooking videos.”

Bread + Butter’s fundraising efforts aim to help students gain employment in the culinary industry. After the students complete their training, the nonprofit helps place them in a job within Charleston’s hospitality industry.

The first class in the series will focus on knife skills, and future classes will explore pasta making and butchery. Tuesday, participants will make a salad incorporating local greens, fruits and vegetables along with cornbread breadcrumbs and candied bacon.

Attendees will receive an email outlining the ingredients and equipment needed in advance of the class. The classes are geared towards the students, but they are also open to the public. Each class is donation-based, with a suggested donation of $20.
