[image-1]After 17 years in business on King Street, Fish will shutter on July 15 to make way for Patrick Properties Hospitality Group’s new Parcel 32.
The change comes just a year after Fish’s founding Chef Nico Romo departed to begin his own concept, Nico in Mt. Pleasant. Chef David Schuttenberg took over for Romo in November of 2016. While he revamped the menu — City Paper critic Vanessa Wolf appreciated the more Asian-leaning focus — CEO Randall Goldman says he felt the time was right for a change.
“This year will be 20 years of this company,” he says. “When you look at the trajectory city, the restaurant is 17, the only two restaurants still up here are Joe Pasta and Juanita Greenberg’s. Rue de Jean was a Houlihan’s. Basil was a Huddle House.” Which is to say, tastes have evolved and so should Fish.
[content-3]”One thing that always stood out, the restaurant didn’t tell a story about Charleston,” says Goldman. That’s something he plans to remedy, planning to focus on the 1836 single house’s history and bring it under the umbrella of PPHG’s other properties which include the William Aiken House, Lowndes Grove, and the American Theater.
To get there, 442 King St. is about to undergo a massive remodel. Following the final service on July 15, the restaurant will close for a few months of renovation.
“We’ll have new paints, new bar,” says Goldman. The entrance will change along with a door to the courtyard.
[content-1] “It’s important that we put Fish in the journals of time and history where it served. So that doors are shut. There’s a sad side to me because that’s my concept, but like everything in life you graduate to the next grade and take these experience that you’ve learned.”
Schuttenberg will continue to operate as chef at Parcel 32 where he’ll serve a menu a press release says will incorporate “flavors and heritage of the coastal South in a refined, yet relaxed gathering place that welcomes everyone to our tables.” Goldman describes it as reflective of Charleston’s port city history: “You take these traditional dishes and you put the influences that are particular to our area.”
Parcel 32 is slated to open this fall.
