[image-6]The 40-seat bar is in, the indoor stage is set, and Home Team BBQ Downtown (126 Williman St.) is ready for action. Aaron Siegel’s third property will officially unlock its doors at 11 a.m. beginning Tues. March 8.
We got an early taste today and unlike Home Team’s West Ashley and Sullivan’s locations, we’re told the downtown operation will feature a new level of sophistication. Now don’t get us wrong, we’d argue chef Taylor Garrigan’s menu is already sophisticated — show us better pork rinds, people. But at the latest Home Team, an additional plates menu will look a bit more dressed up. For example the pork brisket today arrived with nuanced flavors of lemon on fried Brussels sprouts and fresh rainbow radishes while a confit picnic taco was a far cry from basic with pickled onions, pork cracklins, salsa macha, cilantro, and cotija.
Things are also getting amped up on the bar menu. New bar manager Adam Rothstein just moved down in December from New York City where he lived for 11 years working at places like Empellon Cocina, Il Buco Alimentari e Vineria, and Seamstress. At Home Team he’s serving up a fresh selection of drinks like the Mai Bow Tai that’s got a a toasted pecan orgeat syrup made from pecans sourced at GrowFood. We’ve waxed poetic about the Gamechanger plenty, but the Mai Bow Tai may be the real summer game changer for Charleston.
