Mex 1 Coastal Cantina will start serving brunch on Sunday, April 18, when it will dish out four types of huevos rancheros, five breakfast tacos, a Mexican burrito, churro doughnuts and plenty of brunch-themed cocktails to wash it all down. Moving forward, brunch will be available every Sunday from 10:30 a.m.-3 p.m.
The expanded brunch is a first for Mex 1, which has only served a limited brunch offering with a handful of options in the past. It’s hard to pick a favorite on the menu, but Mex 1 will pride itself on its huevos rancheros varieties like the huevos diablos, a creamy combination of queso, grilled shrimp and two fried eggs layered on top of a crisp tortilla. Those with a sweet tooth can opt for the fresh made churro doughnuts with caramel dipping sauce or French toast, which is topped with powdered sugar and berry compote.
Patrons can also look for several new beverage options from Mex 1 beverage director Morgan Hurley. The “Breakfast of Champions” and the “Dawn Patrol” — both of which utilize espresso-infused tequila — cater to coffee lovers, and the “Tropical Iceberg” offers an interesting take on a beer cocktail. But, the Mex 1 Coconut Hydrator, which is served in a fresh coconut, will be the star of the show.
“I have never been a fan of Bloody Marys and created the Mex 1 Hydrator while on a bachelor party in Vegas,” Hurley said. “Pursuing the endless summer is what we are about, and what says summer more than sipping our Hydrator out of a coconut.”
