In recent weeks, a hand-painted sign has appeared on a little green building at the corner of Ashley Avenue and the Crosstown that’s been causing plenty of drivers to salivate. Barbecue?! Above the Crosstown? Surely that means it will be inexpensive and delicious.
True enough, owner Brian Wolter says that’s exactly what he’s going to deliver. “Porky’s is going to be a real neighborhood barbecue joint,” he says. “You’ll be able to get a platter for $5 or $6 and a sandwich for $4 to $5.”
Wolter is a veteran of the food and beverage business, buying Gilroy’s Pizza more than a decade ago when he was a mere 19 years old. He was originally going to open another Gilroy’s in the building, which he purchased a year ago, but he also operates the tiny Pep and Cheese pizza shack on Coming Street and felt like it would be too much pizza in too small an area. At Porky’s Barbecue, he’ll be smoking pork in a gas smoker.
“We’re going to run three different types of sauces: vinegar-based, mustard, and ketchup,” says Wolter. “I always like the simple places with only a few things on the menu. We’ll have pulled pork and ribs. We might do a fried catfish night. There will be four or five sides every day, and they’ll rotate out.”
Porky’s will serve lunch and dinner from 11 a.m. to 9 p.m., with later hours on Sunday afternoon due to the area churches. The space is only 500 square feet, so it will primarily be a takeout and delivery operation. Wolter says they are on the last round of building inspections, and they expect to be open in one to two weeks.
