When Butcher & Bee opened a few months ago, owner Michael Shem-Tov promised regular pop-up dinners. His first was held in December and had quite a turnout. The cuisine was Vietnamese, the food was prepared and served by the Nguyen family of Goose Creek, and the results were somewhat mixed.

Afterwards, we learned they were unprepared for such a robust crowd. That night, the spring rolls were made painstakingly to order by Janice Nguyen Hudgins because her mother, the cook behind the food, didn’t want them to be made too far in advance because they’d dry out. Such dedication to quality led to a slow service, but it was fun for the family, and they looked forward to improving for the second pop-up, which is coming around this week.

On Thursday night (Jan. 19), the Nguyens will once again take over the B&B kitchen, bringing back the same menu of spring rolls, egg rolls, pho, and crepes with the addition of some cabbage slaw with chicken.

Bring your own beer or sake to enjoy and eat there, or call ahead for a takeout order. The pop-up starts at 6 p.m. and goes until 10 p.m. (or until the food runs out).
