Tank Jackson of Holy City Hogs, with the help of Chef Toby Rodriguez of Lache Pas Boucherie in Lafayette, La. and Bull Street Gourmet are hosting a Cajun-infused pig roast today (May 16)  in the Berlins parking lot on King St. Rodriguez, who hosts farm-to-table clinics teaching chefs how to butcher animals around the country, flew in just for the event.

For today’s roast he selected one of Jackson’s Tamworths. According to the heritage hog farmer’s Facebook page, the fire is lit and “spit roasting a 100 pound pasture-raised delight” is about to commence.

A limited number of tickets are $15 and on sale now (Chef Rodriguez is selling them from the Berlins lot) and Jackson tells us folks can head on down between 6 and 9 p.m. to pick up a plate. Members of the Folly Bluegrass Society will also be on hand pickin’.
