Coleman Boulevard’s new Americano restaurant — owned by the same crew as The Rarebit — has announced its chef, Edwin French. Hired from Asheville, N.C., French has been the culinary director at Pack’s Tavern and The Century Room on the Park as well as executive chef of the Biltmore Company.

In keeping with Americano’s retro Latin feel, partner Rob Hightower says the chef will deliver traditional Central American dishes. “The food will have the Caribbean/Cuban base foods like black beans and plantains and then we’ll add in things like tacos and empandas,” says Hightower.

Louis Yuhasz, who helped with the hiring, says French is, “super experienced, very smart, sharp as a whip, and an area native with a great background and lots of good references such as Bob Waggoner and Michelle Weaver.”

Americano is slated to open late summer at 819 Coleman Blvd.
