Pink Cactus, the Oaxacan-inspired Mexican spot that opened early March on Spring, is expanding their operations — you can now swing by for pink margs and mushroom quesadillas from 11 a.m.-3 p.m. Tues.-Fri. and huevos five ways Sat. and Sun. for brunch from 11 a.m.-3 p.m. They’re open for dinner Tues.-Sun. starting at 5 p.m.

Owner Brooke Warden also notes that they’re hoping to have their patio finished by this weekend (for Cinco de Mayo, of course) and they have a new parking lot in the works out back.

We’ve only stopped by for the requisite salt-rimmed margs and a killer salsa trio (the smoked cashew salsa is worth the trip), but we’re certain the summer sun and promise of cauliflower tacos on a weekday will beckon sooner rather than later.

Pink Cactus lunch menu highlights include fish tacos with Brussels, a short rib quesadilla, and a chorizo and avocado torta. Brunch has similar offerings, plus huevos five ways, from Huevos Divorciados to chilaquiles. Check out the full menus below:
