Walking into Philly’s means traveling north into the lands of the industrial past, where an Italian immigrant community, forging a new America amid the manufacturing enclaves of Philadelphia, invented what has to be one of the most delicious of American foods. Philly’s does it right, every bit as authentic as the more famous spots back home. They ship in the meat from Philly and have their rolls custom-baked to precise specifications, which they believe superior to the traditional Amoroso rolls (which they also sometimes keep on hand for loyal customers). You may be able to find other cheesesteaks closer to downtown, but these guys have been doing it right for generations.
