Last year, Carolina’s announced an out-of-the-ordinary pairing of fine cuisine and beer — a new take on traditional wine tastings that took aim at beer connoisseurs, wine snobs, and curious diners alike. On several elegant occasions, newly-established Executive Chef Jeremiah Bacon prepared dishes using classic and specialty ales and lagers as ingredients, then served them alongside the beer in five-course dinners. These events helped demonstrate the complexities of beer (often, there are more complex flavor and aroma components in beer than in wine!) and the wide-open possibilities. Let’s hope these events continue through 2008.
