There’s not much English spoken on a typical Sunday at Los Parados, but between the delectable smells of the kitchen and the friendly, family vibe of the crew manning the dining room, gringos needn’t worry about feeling out of place. Once a week, they serve big steaming bowls full of tripe and hominy, stewed down with chilies and backed by tacos full of roasted lamb so tender you could eat it with a spoon. We squeeze lime over the whole mess and dig in for hours of spicy fun.
