If the only pimiento cheese you’ve ever tasted has been that sweet and processed orange crud in the grocery stores, then real pimiento cheese will be a revelation. Grated cheddar, fresh pimientos, mayo, and not much else are mixed together for a fattening but classic spread that can be used all kinds of ways. At the Glass Onion, they’re very generous with the pimiento cheese. Order the sandwich, and it will come two inches thick. Order the omelet, and a big blob of it will get wrapped in a thin blanket of eggs. It’s made in-house and is the best we’ve encountered in Charleston since Chef Louis Osteen left.
