Fat Hen’s owner, Chef Fred Neuville, is bringing freshness to the name with his latest project, a chicken farm. Neuville amicably left his other restaurant, Wild Olive, to dedicate more time to his new farm, which will provide eggs and chicken for the Fat Hen.

“We are closing the gap from farm to table,” says Neuville, “this is an exciting moment for us.”

The farm will start off with 300 chickens, some for laying eggs and some for, well, your dinner. This is a Neuville’s first chicken farm. “What a great learning experience it’s going to be, to be able to raise my own food, that is the ultimate experience for a chef,” he says.

Andrew Payne of Wadmalaw Island Farms approached Neuville about starting the chicken farm, and being the local food enthusiast he is, Neuville happily signed up. “I’ve always been one to push buying locally, you can’t get fresher than that. People are so into know where their food is coming from today, and for the chicken at the Fat Hen, it will be coming from 20 minutes down the road,” says Neuville.

The Fat Hen is just the latest of many restaurants in Charleston establishing partnerships with local farms — to our benefit.
