On Saturday night of the Charleston Wine + Food Festival, James Beard Award winner Ashley Christensen joined Jeremiah Bacon and team to cook an incredible meal under the stars on the back patio of The Macintosh. Each and every dish benefited from the open flame of the grill and wine pairings provided by Patrick Krutz of Krutz Family Cellars.
You couldn’t have asked for a better night or a better setting. The back patio of the Macintosh was specifically designed to host dinners of this magnitude and it showed on Saturday night.
Guest were greeted with an array of snacks like Ashley Christensen’s deviled eggs.
With the outdoor kitchen being in direct view of every seat, guests got to watch as Christensen, Bacon, and the rest of the team prepared each course.
The highlight of the night was a medley of barbecue rabbit and rabbit blood sausage. The balance of spices tamed the minerality, making the sausage very approachable and incredibly delicious. It was no surprise to hear a few guests note they had never had blood sausage but really enjoyed it. Delicate pieces of rabbit swam among braised cabbage and lentils in a country ham jus that begged to be sipped by the glass.
The night ended with a decadent dark chocolate terrine. Luckily, there was plenty of Krutz Stagecoach Vineyard 2010 Cabernet Sauvignon to go around, as it paired just as well with the chocolate as it did with the trigger fish and oxtail agnolotti. A solid end to wonderful night.
