Nordic Cooking owner Louise Rakers’ vegan eats are now available at Hustle Smoothie Bar in Mount Pleasant Towne Center. Look for five different grab-and-go options that will change with the seasons, Rakers told the City Paper. 

“Personally I’ve seen the need for clean, convenient and tasty grab-and-go items that are vegan and gluten-free. I am on the road so much during the week, and I find it hard to get a good clean vegan meal for the road without having to sit down for a meal somewhere,” said Rakers, who launched her vegan meal delivery service in March 2020. “[Hustle owner] Helen Hall is so incredible, and we are on the same track when it comes to clean fuel for the body.”

Daily offerings include: Moroccan aubergine and pesto sandwich (vegan), open-faced Buffalo jackfruit sandwich with figs, pickled onions and sprouts (vegan), mung bean and quinoa salad with beetroot hummus (vegan and gluten-free), “Dreamy Harvest Focaccia” (vegan and gluten-free) and jackfruit pasta salad (vegan and gluten-free).  

“The grab-and-go items are perfectly sized, so you can pair them with a Hustle smoothie with a Blender Bomb and have a complete meal with a bunch of fresh ingredients and nutrients,” Rakers said. 

According to the Danish chef, Hustle will now use her 3-ingredient sourdough bread for all of its toasts moving forward.
