Last year George and Celeste Albers gave up growing vegetables to focus on egg and milk production at their farm out on Wadmalaw Island. The cows are 100 percent grass-fed Jerseys, and the milk is un-homogenized and un-pasteurized and about as fresh and natural as it can get. It’s thick and creamy with a soothing pale yellow color and a definite earthy, hay-like overtone that conjures up pleasant memories of sunny pastures. The flavor is a shock to a palate raised on cool, pure-white, almost tasteless industrial milk, but it will grow on you. The curious can pick up a bottle or two from Celeste Albers herself down at the farmers’ market in Marion Square once it reopens in the spring.
