MORNING HEADLINES  | The new issue of Dish culinary magazine by the Charleston City Paper’s cuisine staff hits the streets Friday at our 700 pickup locations.  But you can see the full issue online now by clicking here.  

The winter issue explores chefs’ kitchen tips, classic sweets, the secret to a perfect chicken and foods from the African continent. Among the highlights:

  • Chef secrets.  Writer Liz Regalia spoke with a handful of pros in town to learn their secrets. Looking to perfect an omelette? Don’t brown your butter. Want to take your fish to another level? Forget trying to crisp the skin and poach it instead.
  • Sweets.  The Holy City’s list of traditional sweets is impressive.  Writer Stephanie Hunt dives deep on desserts like coconut cake and Huguenot torte.
  • Food traditions.  We also spoke with the husband-wife duo behind Bintü Atelier, the acclaimed West African restaurant that has added a much-needed, community-focused spot to the downtown landscape.
  • Cluckin’ good.  And while chicken is often an afterthought at restaurants, we might argue it’s actually the perfect food. Charleston has many delicious versions and we explored Peruvian, French and Italian iterations of the humble bird.

Charleston officials laud completion of Low Battery seawall project. The project raised a seawall by 1.8 feet to help protect the city from sea level rise.  It’s finished six years after construction started.

S.C. House budget committee OKs $15.4 billion spending bill. The House budget-writing committee on Wednesday approved a 2026-27 budget bill that will give raises to teachers and state employees. It also takes into account tax cuts for income and property. The measure will be taken up next month on the House floor.
