Tristan Executive Chef and James Beard nominee Aaron Deal has left Charleston for a prime gig in the Windy City. He’ll be heading to New York first for a short stage (internship) at the renowned Gramercy Tavern and then he’ll head to Chicago to help relaunch the “warm and urbane hotspot” Custom House, according to Bret Thorn over at National Restaurant News.

Meanwhile, Tristan has been left in the capable hands of sous chef Randolph Stafford, and General Manager Steve Harris tells us they are in final negotiations with a new executive chef. He was cagey on the details but will let us know when they finalize the details some time next week.
