[image-1]Eventually the former Ark Lounge Bar at the corner of Grove and Rutledge will be a cafe and butcher shop. But for now, Alec Bradford, the owner of the future Herd Provisions restaurant, must wait for construction to start. But rather than sit around twiddling his thumbs waiting for permits, Bradford has outfitted a new food trailer to do pop-up events in the interim.
Bradford will kick things off with his Herd Provisions trailer on Oct. 14 when he partners with Cooper River Brewing for a beef and veggie burger bonanza.
Herd Provisions Chef Aaron Swersky will serve up the burgers — made from Bradford’s Leaping Waters Farm Ancient White Park cattle — along with fries while Cooper River pours the beers.
Bradford and Swersky plan to release a full schedule of fall pop-ups soon, but in the meantime you can get a taste of their burgers at various locations around town this autumn.
