Spanish and Portuguese Rutledge Avenue restaurant Laurel will now open its doors on Mondays from 6-9 p.m. with an all-you-can-eat paella menu, owner Trae Wilson told the City Paper Friday. Look for $25 all-you-can-eat paella, three new cocktails and sangria starting Monday, May 24. 

Laurel opened in March in the space previously occupied by Nimbo Pizza near downtown’s hospital district. Wilson, known for previous establishments like Granville’s Cafe & Catering and Grand Rooster Restaurant, completed nearly 100% of the construction on the property himself, adding a new bar, floors, tables and lighting before finishing the space with touches like prints from local artist Jill Hooper. 

Each Monday, Wilson will serve three types of paella made using Calasparra rice from Spain. 

“We’ll have seafood and rabbit and chicken paella, and a vegetarian choice as well,” said Wilson, describing how he learned to perfect the dish. “I just studied and ate it in Spain.” 

With the addition of paella Mondays, Laurel will now be open for dinner Monday through Saturday.
